Production and Processing of fresh, frozen chicken for direct to consumer consumption
The production and processing of chicken for direct customer consumption involves several key stages to ensure that the product is safe, high-quality, and convenient for consumers.
1. Raising Chickens: Chickens are raised on the farm organically, with attention to proper nutrition, health, and biosecurity measures. The health and welfare of the birds are monitored to prevent disease, often using vaccines.
2. Slaughter and Processing: Once chickens reach market weight approximately (1.5-2.5kg), they are selected and transported to the slaughter house. At these facilities, chickens are slaughtered in a hygienic environment, and their feathers, internal organs, and other inedible parts are removed and sorted accordingly.
3. Cutting and Packaging: After processing, the chicken is cut into various portions (whole, breast, thighs, wings, etc.). The meat is then either prepared for fresh sale or frozen to extend shelf life. Fresh chicken is typically packaged with minimal processing, while frozen chicken undergoes rapid freezing to maintain its quality over time.
4. Freezing and Preservation: Frozen chicken is rapidly cooled to prevent bacterial growth and preserve flavour, texture, and nutritional value. It is then packaged in airtight containers to prevent freezer burn and contamination.
5. Direct-to-Customer Distribution: The final product, whether fresh or frozen, is distributed directly to consumers through local markets, grocery stores, or online delivery services. Direct-to-customer models often emphasise freshness, quality control, and transparency in sourcing.
6. Safety Standards: Throughout the process, strict safety and sanitation standards are followed to ensure the chicken is safe for consumption. This includes inspections, testing for pathogens, and compliance with regulations from food safety authorities.The goal is to deliver a fresh, nutritious, and convenient product that meets consumer demand for quality and safety.
